I'm so easily swayed: I started the repair last night based on Ken's and Peter's posts. 😁 I should be done tonight or tomorrow when I have some time to put into it.

I started with breadknifing on an 80 grit diamond plate, thinned on a 140 diamond, and am now working on getting the deep scratches out.

I'll post pictures when I'm done and let everyone know how it goes.

I flatten a 60 with a 24 grit Nubatama OR a 46 grit diamind plate.

I flaten a 24 grit with another 24 grit.

I never use a sidewalk or cinder block.

Well, I was working on polishing this knife's hagane in my garage when a wasp flew in, scouting out a place for her nest. I thought, "wouldn't it be cool to cut that wasp in half with this Mazak?" I took a swing. I missed the wasp, but I did hit a nail sticking out of the wall. I figure that I missed only due to the performance of the knife, so next time I'll need to try it with a Kato or a Fujiyama.

PS: I wasn't even drunk. Really. No, really.

It's been a fun project. As you can see, I left a small chip. I wasn't sure how much material thinning and sharpening would take off, so I erred on the side of not removing enough in the initial breadknifing.

I tried really hard to sharpen the right side with a hamagarabi (sp?) convexity, for food release. The left side is pretty flat/zero grind. Here's the results with a very old potato. As you can see, some slices stuck, but the majority stayed put on the board. Not too bad, I think.

Yep... I was "sober" when i stuck a propane torch into a carpenter bee nest(back awning of the employee entrance)....

I'm very glad I got talked into repairing my Mazaki. I was able to keep the profile I like so much, and I may have even improved the grind. Thanks Ken and Peter.

Also, it picked up a beautiful blue patina tonight when I used it on some roasted chicken thighs. I think nice patinas are the knife's way of saying "thanks".

Glad you are liking the results! You could still take out thst little chip :) And put a sharper point on it. Do the point entirely from the top. On a coarse stone it will just take minutes.

Good job! Your knife is smiling :)
