Does anyone know what the Lv rating on this stone might be? I’m new to using naturals and this is my only one (so far). I need a point of reference...it feels hard...?

Mines a Lv 5. I always use a nagura with mine. Screaming razor edge.

Maybe a 3.5 to 4. It does not need a nagura and cuts fast and polishes nicely.

I agree. Not as hard as the Ozukus that we sell and also generates mud on it’s own but I often use an Atoma slurry block just to get the ball rolling. The polish it gives is very nice. I have another one, here it is: https://www.chefknivestogo.com/atmequ.html

I'm guessing it's ok to show this since Kosuke showed it on Instagram.

If you want to know what the Fujiyama sharpener uses on their high-end knives...

This is Imanishi's basement. ;)

Shouldn't that be "Fujiyama" sharpener? Not that I noticed... ;)

I have had one for about a year and I love it mines a lvl 5 pretty hard creates great mud ideal for single bevels cuts lightly but by the time I put my blade on it I am polishing and honing so I like that it doesn't cut so much ....i jump to a suita after
