Stone Progression

Hi folks -

Relatively new to sharpening by hand, though I have done a couple rounds.
I use three stones.
- 800 Grit Chosera
- 3K Grit Chosera
- 8K Suehiro

Curious if this is a sufficient progression for basic sharpening.

Second question: I practiced at first on some cheaper knives and noticed marks on the blade. Presume this means my angle was too low?

Yes, though you should do most of your learning on the mid grit stone - the Chosera 800. You will eventually need to add a coarser stone for bevel thinning.
And scratching your blades does mean you have some extra motion somewhere. Happens to a lot of people. It doesn't mean you chose too low of an angle for your edge.

I get a bit of cloud on blades at times - nothing wrong with it. If you don't like it use a hard stone - a muddy stone tends to do this to some of my knives

I put a couple of scratches on a blade as I was switching sides a accidentally hit the stone. Doesn’t take much to scratch the blade.

I found you have to hold your tongue just right to keep from scratching your blade. :D
