Need Tonkotsu Techniques

Post by dc2123 »

I was recently gifted some pig bones from a traveling friend, and have been wanting to make tonkotsu broth for ramen.
I've read a lot of recipes/techniques. Though I do want to see if anyone on here has experience with making it.

I would liberally season the bones, put them in a big roasting pan and bake them at 350 for an hour, letting them cool in the oven for an additional half hour, then add a gallon of water to two pounds of bones, and reduce to 2-1/2 quarts at a low simmer for 4 hours or so. Keep it simple.
