It was October Feast in our town last Saturday and the brewery was hot smoking pigs. I was talking with the chef and asked him what he was doing with the heads and he had two wrapped in foil and more if I wanted free. Not being greedy and knowing what a pig head yields I was happy. I heated them up Sunday and broke them down to meat and tongue then pulled it all and shared as Carnitas on Naan bread with some friends along with red cabbage slaw, tater tots and some dilly beans and peppers I made. Sure was tasty
Big fan of pig head carnitas. I was in an animal share a few years ago and seemingly no one wanted the heads. The carnitas were the best application. Beat the pants off of the headcheese I also made.
