My riff on the usual St. Patrick's Day dinner

I'm not big on boiled food with the exception of eggs, pasta and lobster. I usually make Ruben Burgers for St. Pat's, but this year I put a recipe together that I'm very happy with - CORNED BEEF GALUMPKIS. I ground bottom round corned beef with carrots and cooked the liquid off on a fry pan. I had soaked the roast in four changes of water and over night to rid it of some saltiness. In another skillet I fried some hash browns and onions - that made the filling. I steamed cabbage leaves and stuffed them then made a bowl of Bloody Mary from scratch with potato vodka and used that as the braising liquid. It turned out great and I have enough for leftovers and give away's - really delicious.
