Day off and I am in the kitchen. Cooked some white beans this weekend to freeze and made chicken stock. When I do that, Tuscan White Bean Soup is an easy dinner.
I do a few things differently with mine. I like past e fagiole, so I add some ditalini to my Tuscan white bean soup. My wife is not a big fans of beans. As such I use fewer beans for thickening and eating. My broth is clearer.
I cook my white beans with half an onion, a few cloves of unpeeled garlic and one dried chile pepper. Chicken stock is made with just chicken parts, onion and a touch of garlic.
Sweat diced onion, celery and carrot (I add tomato in season). Add garlic and a pinch of chile pepper flakes. Add broth, Parmesan rind, bay leaf, thyme. Boil and simmer. Add beans. Simmer a few minutes more. Turn off heat, add baby spinach, salt and pepper to taste and fresh parsley. Sprinkle with parm.

Leftovers the next day were, as expected, even better. I made most of the soup on Saturday. I did a roundtrip drive to upstate NY on Sunday to drop my son back off at college. I finished the soup after I got home before I ran out of energy.
Paired with a simple grilled cheese sandwich and it was heavenly. Got a shop near me called Bread Furst that makes the best boules I've ever eaten in the US. Tops are almost black with carmelization. Bread, ham, heirloom tomato, cheddar.

This is a great soup in the summer, Tim. Use rosemary instead of thyme if you have it. And puree or mash more beans to give it a fuller body. Goes well with a simple salad and crusty bread (crostini, panini, grilled cheese, etc).

Since you have leftovers, try a bowl with a spoonful of pesto as a garnish.

I used up a big batch of pesto right before I made the soup. Love pesto on a pistou-like soup so I will give it a try, but Tuscan bean soup is quite hearty on its own. The pesto might compete more than complement. Pesto-topped crostini as an accompaniment might be better.
