Spent too much time on the west coast of southern Italy - calamari is a staple there and now a staple here. Gotta know where you get your product - and I like baby octopus in it. The pig anus thing is overblown unless you try to get it cheap.

Not much to that link. Is the claim that buying "fresh" calamari at the seafood market could somehow be pig ass or perhaps the battered and fried rings you'd get at a not so reputable restaurant? I enjoy calamari in all its various forms. Don't make it nearly enough.

We generally think of "calimari" as fried, but I prefer a slow cooked squid as in "squid and chorizo" stew. Usually takes an hour and the flavor and texture is completely different from flash fried.
