Along with the standard Edge Pro stones I have a CKTG 140 grit diamond and Shapton Glass 1000/3000. I use the 140 diamond to reprofile new knives.
Can I simply jump from the 140 to the Shapton Glass 1000 or must I work my way up more gradually? I'm asking with respect to overall efficiency in time and quality of the finished edge.

I would suggest using an intermediate grit. The fastest solution is a 150 grit Nubatama stone. From there in many instances you can jump to a 1k stone. The 150 is also available as a 150 / 1200 combo stone too.

Normally I am a big jump kind of guy but I agree with ken. 140 diamond, for me, needs something between it and the 1k. The 500 glass works but I prefer something coarser still. Those errant 140 scratches are hard to polish out.

I would use a 220-320 after the 140 before the 1k.
If God wanted me to be a vegetarian he wouldn't have made animals taste so good.
