Finally got my hands on a Konosuke Fujiyama FM (B#1) and Konosuke HD2. Both 240 mm, though the FM is a little undersized as expected. The FM has an ebony and black buffalo horn handles, while the HD2 has a laurel handle. These really do have exceptional fit and finish. Much nicer to hold than any other knives in my collection. Looking forward to trying these out!

I don't have any potatoes in house. I did try it on some carrots and brussels sprouts. Simply a pleasure to use. Gonna take it to work with me tomorrow, as I just returned from vacation.

Well, I figured go big or go home! 😏. I was originally looking at a 165mm bunka, but I wanted this knife to replace my current 8” Wusthof and didn’t want to be underwhelmed. The knife shop is Utah Knife Shop in downtown SLC.

Congrats! Welcome to the forum and to the pleasure of Japanese knives! That knife is a monster, but given that it is a Kurosaki, I bet if feels light and agile in the hand. Enjoy!
It does feel really great! As I was mulling over what knife I was going to get in the shop I was a little worried that it might be too much knife, but now that I’ve used it for a week, I feel like the extra length lends itself to a lot of versatility.

Great knife. I have the 240mm version. It will start looking really cool once you get a nice dark patina on the AS core steel. Remember to not use scratchy cleaning pads or sponges if this is your first JK. It will take off the KU finish and scratch up the SS cladding. Soft sponges or cloth with soapy water is you need. I have not any rust issues with the AS on this line. I also have the 180mm Nakiri.

Thanks for the tips! I really have been babying it with an immediate rinse, sponge wipe (soft side only), dry with cotton cloth and finish up with a microfiber cloth after each use. I process a lot of alliums so it’s already started to patina beautifully 😁

Munetoshi 240 mm arrived this week. Pretty sturdy/heavy feeling knife compared to most of my others, but slightly lighter than my Toyama SS clad (205 vs. 209 g).

Why is it that whenever I try to trim down my collection, I end up finding a knife that I can’t say no to?!? 2020 is the year that I’m supposed to shift some funds towards other hobbies, but I couldn’t turn down this Yoshikane Tamamoku V2 Suminagashi 270 when it was offered to me. I don’t like lasers or lightweights so it was love at first sight when I saw its beefy-ass grind. Yes, I like big knives. This one is 278x56 and 347g. I still need to play around with her, but so far I’m extremely impressed. Looking at the choil, you would think that this thing would be a wedge monster, but nothing could be farther from the truth. I don’t know much about this line so any info from the old school vets here would be graciously welcome. And now time for some porn...

Was hoping to post the last two purchases sooner, but usps strikes again .. after 11 days in customs and another 5 days in the great ether that is USPS system, meanwhile only a few miles away from me at all times .. I have the Hobbit-size Dalman.

Getting one was a bit of effort as well, I triple checked the confirmation email as last few attempts were not successful. I guess I got faster at clicking this time.

Top: Dalman 275mm x 57mm S-grind AEB-L, not sure about the weight, I didn't copy it before the sale page went away ...
- it's certainly is not a laser, like the last dalman I had. Quite forward balance, quite hefty in hand. Came with shaving edge.

Bottom: Yu Kurosaki Fujin 240mm x 52mm from CKTG ... it's just so pretty, it sparkles under the right lights, pictures don't do it justice.
