Youshikane white #2 Gyuto, 185mm edge length, 43mm tall, weight 146g with the Karelian Birchwood custom handle.
My sharpest knife, used mostly as sharpness reference, sharper than my more expensive Gyuto, TF, Shig., Toyama, all of them. still on factory edge, never sharpened but remains 10/10 sharpness while my Shig Kasumi & Toyama are 8/10.
rarely used. Stainless clad, gray hammered finish doesn’t stick, great food release.
very slight scratches on one side of the hammer surface.

Could you post a choil shot and one of the spine so that we can see the grinds? Also, the choil and spine look sharp; is that true?
