This is actually a super cool, very unique knife. My wife is afraid to use the Shibata because she doesn't want to accidentally chip it. This is the type of knife you can really feel comfortable chopping and not be worried about the knife. I am extremely new to sharpening, (this was my second knife), but it felt easy to sharpen.

I bought the cutting board at a Farmer market in Greenville, SC last weekend. Bellew Woodworks. Beautiful cutting boards and other wooden utensils. Mahogany and Maple, but they use all types of wood and probably do special requests

Yeah, it is 280 x 58mm, so pretty much a monster. Pretty light and balanced though, it doesn’t seem unwieldy.

Couldn't help myself and picked up a Jiro Tsuchime 240 mm gyuto. Haven't tried it yet, but gotta say it is something special. Really nice weight (260 g) and balance to it. Beautiful craftsmanship and finish (not that you could tell from my mediocre picture, haha). I really like the tagayasan handle too.

Some people like lasers, but I’m not one of those people. I like my knives to have some muscle, and this Yamahide 270 W#1 is the epitome of heft. While I still need to get more acquainted with this one, I’m pretty astounded by its performance. I’ll know more over the coming weeks, but this knife exemplifies why I love well done beefy grinds. 274x60mm and weighs a whopping 438g!!! The handle is wenge with brass bolster & end cap.

Sometimes I like to joking think of you as one of those guys who uses a 9" hunting knife to eat an apple in the hand like Crocodile Dundee. hahaha. J/K. As a lover of lasers, I'm constantly trying to push myself to appreciate heavier knives. Your posts are always strong motivation for me to keep trying new things. Thanks! Oh...and absolutely stunning find. That knife is really a museum piece if I've ever seen one, and I mean that quite literally.

I knew I forgot something For reference, the tang is 6.6mm at the handle, 6.1mm over the heel, 4.0mm halfway, and 1.5mm at 1” from the tip. It’s a really good example of how a beefy grind should be done.

Im really digging these heavy knives. Nothing wrong with lasers (even though they’re not my thing), but there’s really something about a nicely done convex grind. Prior to this, my beastliest knife was my Toyama 270 damascus, and that thing is a 350g feather compared to this behemoth!

I picked one up as well. Here it is next my Black Lotus. Mines even heavier at 463g
I’m a big fan of this knife. The grind works really well. Impressive food release and it doesn’t even crack carrots. The weight really makes it power through ingredients.
