Or you could just feed one of your knives to another one. haha. Survival of the sharpest!

Been after an Ashi for a long time, 249x50 with crazy cool banding. This may be one of those knives that you want forever but release it after checking it out, too nice to use.

Traded. Received what I had into it back out of it. Such amazing knives, just too much knife for me. I couldn’t see me using it and I didn’t want it just have sitting there for bragging rights. I don’t regret buying it and be able to see and touch what all the fuss is about, they really are amazing pieces.

I loved the Yamahide KU so much that I begged my buddy to grab me the suminagashi version before he flew back home. It sports an extremely asymmetric convex grind and an aogami super core. The suminagashi pattern is more subtle than others I’ve had, and I’m totally digging the ironwood handle with ebony spacer. Edge length is 274mm; heel height is 57mm; weight is still a beefy 431g. I can’t wait to compare it side-by-side with the wide bevel KU this week.

Hey guys, new member here (long-time lurker who has read the forums plenty over the years to make buying decisions).

I felt compared to make a new knife post after finally managing to track down a very hard-to-find goal knife, a Konosuke Fujiyama (used-but-never-used). This one is a 240mm Kiritsuke Gyuto in Blue #1 with an ebony and blonde buffalo horn ferrule.

And here it is after a prep-intensive meal of beef and vegetable soup:

I could offer a personal review, but so much has already been said about how great these are. It's all true. I already can't wait for CKTG to get more back in stock.

New custom from Andrei Markin, a knifemaker out of Russia that specializes in PM type steels. This is a 220Gyuto in M390 steel with a Karelian Birch and Bog Oak handle.

Tanaka Kyuzo Blue #1 Kurouchi Damascus Gyuto 240mm

This one just seems to fit, I wasn't real impressed with the out of box edge, fit and finish is a bit rough, but after a few passes on my stones it's quickly becoming one of my favorites.

Wantanabe 180 Pro As Nakiri.
This isn't fancy but sure is a good cutter and my first knife ordered from japan where they made it for me. (which was kinda scary but gratifying)
The edge just about disappears! Thanks for advice from Jacko9!

pd7077 wrote: Fri Jan 10, 2020 3:59 pm Been trying to slow down on new purchases, but I finally broke and got my first knife in 2020: a Konosuke 180mm ginsan wide bevel nakiri. Been after this one for a while so it was pretty easy to break my resolution.

pd7077 wrote: Fri Jan 17, 2020 6:06 pm Why is it that whenever I try to trim down my collection, I end up finding a knife that I can’t say no to?!? 2020 is the year that I’m supposed to shift some funds towards other hobbies, but I couldn’t turn down this Yoshikane Tamamoku V2 Suminagashi 270 when it was offered to me. I don’t like lasers or lightweights so it was love at first sight when I saw its beefy-ass grind. Yes, I like big knives. This one is 278x56 and 347g. I still need to play around with her, but so far I’m extremely impressed. Looking at the choil, you would think that this thing would be a wedge monster, but nothing could be farther from the truth. I don’t know much about this line so any info from the old school vets here would be graciously welcome. And now time for some porn...

pd7077 wrote: Tue Feb 04, 2020 7:17 pm So much for my plans to trim down my collection. Another Konosuke ginsan fell into my lap...this time a 240 gyuto that should pair well with the ginsan nakiri I found last month. It’s a bit shorter at the heel than I prefer (46mm), but I’ll learn to adjust.

pd7077 wrote: Sun Feb 23, 2020 9:08 pm Some people like lasers, but I’m not one of those people. I like my knives to have some muscle, and this Yamahide 270 W#1 is the epitome of heft. While I still need to get more acquainted with this one, I’m pretty astounded by its performance. I’ll know more over the coming weeks, but this knife exemplifies why I love well done beefy grinds. 274x60mm and weighs a whopping 438g!!! The handle is wenge with brass bolster & end cap.

I’ve been working out of town for the last three weeks. Felt good to come home with the current events, I did find these three knives waiting for me. All three are knives I’ve wanted to try. Raquin 220 KT, Xerxes 265, Comet 220. RonAz let me try his Xerxes and I was hooked, thanks again Ron! Be safe people, it’s a little nutty out there.

That's an impressive trio of hard to find knives, I imagine you had a big smile when you saw all those boxes. The Xerxes looks outstanding. Congratulations
