All these knives have been used in a professional kitchen. They are all fantastic knives that have served me well over the years but just aren't seeing any action anymore since I have stopped working as a cook/chef. The Usuba and honesuki have low to moderate use but the Kohetsu was a daily work horse. Knives have normal wear from use, there's some patina on the Shimo and Usuba as they are a bit reactive.
