I lived every word of that post, since I started sharpening about two years ago, and believe me, I'm still learning. A local chef once told me sharpening takes 20 minutes to learn and a lifetime to master. It's like pretty much everything worth doing—you just have to keep at it and the breakthroughs will come. Frustration is part of the process.
