First test Tsunehisa AUS10 Hammered Damascus Kiritsuke 210mm

My new Tsunehisa AUS10 Hammered Damascus Kiritsuke 210mm arrived today from CKTG and tested on an orange and works amazing!



Did test and sliced right through a large orange with zero effort!

One of my favorite knives, I have found the AUS10 to be vary durable and easy to sharpen.
Home cook, addicted to knives, stones, food and new recipes.

Yeah it is amazing and look forward to using it this year for cooking lots of Asian dishes. I use a carbon steel wok and these knives will make meal prep a breeze and joy compared to the cheap crappy Oneida dull blades I was using for years. They even are way better than more expensive Wusthoff German knives. Not sure why people like Shun and Wusthoff knives so much compared to these cool Japanese knives? Why do so few celebrity chefs use them?

"Celebrity" chef's are generally paid big money by sponsors to use their kitchenwares.

Ah that makes sense! Like how Bobby Flay pushes Shun knives and others push Wusthoff or their own line of cheap knives.Iron Chef Morimoto uses Miyabi japanese knives so these are the two celebrity chef that use a Japanese style gyuto at least. I have a Miyabi but may return it for a more custom Japanese gyuto since it has return policy. What gyuto is best?

Not a beer man myself, but that is easy. Henry Weinhard's Private Reserve, until it was bought out in 1999 and the plant closed. Another Oregon brand down the drain. :( :(

It was always better than the "Schludwiller" beer!

I like well balanced light knives that have nice blue steel and super sharp and great edge retention.

Thanks I am happy with the petty knife as my go to for most tasks. Love the blue paper steel look and razor sharp!
