240mm Magnacut gyuto...new handle installed update!!
Working on this one currently! 3/32" thick Magnacut, 64 hrc. Will be right around 240mm when done.
Overall profile so far: Choil shot: This one has a S grind to it. It has the shallow hollow for the upper 2/3 or so of the blade and a laser convex grind on the lower 1/3 of the blade. Wicked thin choil, with the spine full thickness for stiffness.
Spent about 4 hours today working on the finish so far. I took the leather off of my radius platen, so I only went up to 220 belt finish. I get to 400 and then find odd ball scratches from coarser grits. May put the leather back on so I can go up to higher belt finishes on the hollow portion.

Oh yeah, I actually used my digital caliper to measure the thickness at the edge before I started sharpening. Around .14mm or around .006" was what I got; the caliper kept slipping off the edge when I tightened it up.
I did a quick sharpening with a 400/1000 cheap diamond block and then my 14 micron and 3 micron diamond strops and it was a crazy edge on it. When the edge is that thin, even Magnacut sharpens quickly with diamonds!

Got a bit better hand finish on it. I used 500 grit Silicon Carbide powder mixed with mineral oil and worked up 240, 320, 400, 600 sandpaper with a thin foam backer on cork. Then I used some thicker foam on a popsicle stick and 600 paper and 1200 AO powder with mineral oil and then used 800 and 2000 grit paper, again with the 1200 AO powder and mineral oil to smooth out the surface. It gives a matte 600 grit finish instead of a shiny handrub, so it kinda mimics a stone finish.
You can see the hollow vs convex grind in the pic, too.
I taped off the blade and traced my 240mm Richmond AS Laser profile. There is a hump on the spine halfway down the blade, so I am going to make it closer to the Richmond/Kurosaki profile and clean up the heel
After profiling, it's on to the handle! I leave the tang wide until the blade is fully done for leverage purposes.
This blade is available, so I may leave the final handle up to its new owner! I will prob put a simple test handle on it to try it out with some ingredients first.
Shoot me a message if anyone is interested! Depending on the handle, it will probably be in the $500-$550 range end price.

Its 52mm at the heel and 250mm, which will get trimmed a bit at the tip and heel, so ot should end up right around 240mm.

Got the profile tweaked and a quick tester handle made up. Cut up a couple of peppers and onions for dinner tonight and it was effortless! Good food release and the finish was nice;, onions and peppers just slid right off.

Better shot of the profile with a straight edge. It has a long, flatish spot at the heel and then the curve starts.
I did a quick handle in some laminated wood/G10, but I rushed it and the epoxy started to let go, so I am not showing the picture of that one! I'll do up a better test handle over the next few days. Trying to make it generic to use on other knives; it's easier to test and sharpen with a handle on the blade! I have more SiC and diamond powders coming in, so I will try them on this blade to see how they work.

Did an oversized generic test handle for the knife so I can play with it for a bit. Its some wood laminate with natural g10 between the wood layers. The tang slot is cut big so I can use it on pretty much any gyuto or larger knife I make. Still waiting on the diamond powders.

Made a handle worthy of this blade today! Black G10 layered with copper for a bolster and a blue g10 frame covered in carbon fiber scales!
It looks like a black handle at first from a distance, then you see the little details!

Nice handle, it looks like it would be very comfortable to use. I like that it is kind of understated but not without pattern in the bolster and scales.

It's very comfy in use, but adds a good bit of weight to the blade. The balance point is pretty much right at the choil because the blade itself is so thin and light!
I used a caliper to get some measurements. The spine is right around .090" thick (3/32"), but the thickest part of the blade below that is only .040" where the convex meets the hollow! The hollow is shallower than .040" and goes up to the .090" at the spine. I will try to get a pic of the hollow grind from the side, but I got stuck at work for a 16hr shift today

Finally got a chance to take a picture showing the hollow portion of the grind. So where it hits the ruler near the edge is where it's around .04"/1mm thick. The spine is .090"
