Anyone who loves j knives ought to jump into this pass if they can. I've got a Koishi. Never had a knife that flicks thru onions better. Tip is one of the most capable I've come across. Just a really high-level performer.

Definitely interested if there is still room, Nick. Like the Kamo R2, I would prefer to be between two experienced sharpeners or last on the list. I need more experience before sharpening someone else's knives.

I have two knives from the Koishi series, a bunka and a 210mm gyuto. I really like them. They perform confidently
