What to make on the flattop?

So does anyone have a flattop griddle at home? I have 4 burner Blackstone that we picked up at the beginning of the month. I have run out of ideas on what to cook, though. We have made tons of sliders from burger to BBQ chicken to chopped steak and pulled pork. Again, loads of sliders. :lol: We have made steak and chops and eggs, bacon and hash browns. Pierogie, peppers, onions and mushrooms work out quite well on it too.

Is there anything that screams cook me, in your mind, when you think of a flattop?

Pancakes, crepes, omeletes, porkchops, shrimp, scallops, salmon, teryaki anything (chicken, beef, pork, fish), caramelized pineapple slices, liver and onions, haloumi cheese, 1inch thick slice of provolone with fresh thyme and lemon and so many more !

I've wanted to get a blackstone for some time now. I'm so tempted! I was thinking philly cheese and anything that my local teppan place makes, even the fried rice!

Hah, okay it is just the word smash that got me much like hashtag...Too new school for me, I guess. But yea, I turn 'em to paper with the cast iron grill weight. A little bit of water under a lid to give them a nice cheese skirt too.
