New Knives For Sale

This is a new thread and will be where I list all new blades for sale. My "Recent Work" thread will be work in progress and general postings.

To start off this new post, I have a 215mm gyuto made of 52100 carbon steel heat treated to 62HRC. The handle is dyed and stabilized maple burl with a ferrule and endcap of black buffalo horn and nickel-silver spacers. The knife weighs 5.85oz and has a heel height of 47mm. It is a thin and nimble performer. Asking price is $330.

Here is a matched set, a 240mm gyuto and a 150mm petty. Both are made of 52100 treated to 62HRC. The handles are dyed and stabilized Oregon maple burl with a ferrule and endcap made of black buffalo horn and nickel-silver spacers. The sayas are figured claro walnut with hand turned and knurled nickel-silver pins. The gyuto is ground thin, while not a laser, it is on the thinner side, but is stiff enough to handle tough ingredients. Asking $840.

That set is sweet! 52100 at HRC 62 will knock people's socks off, great steel in a couple beautiful packages!

This is a 155mm petty made of 52100 and has been heat treated to 62HRC. I made this as a tall petty, it is 37mm at the heel, and the handle is angled upwards a few degrees so that there is plenty of knuckle clearance. This should be a good all around utility knife. It is ground quite thin and has a distal taper beginning at about 2/3rd's down the spine. Then handle is end cut royal palm with buffalo horn and nickel-silver spacers. The saya is also royal palm and has a hand turned nickel-silver pin. Asking $325.

This is the 240mm Kiritsuke that was reviewed by Steve Gamache and was involved in a pass around. I have reconditioned to the same level of finish as when it was new. The blade is 52100 carbon steel heat treated to 62HRC. The handle is Gaboon Ebony with a buffalo horn ferrule and encap. The spacer and mosaic pin are nickel-silver. The saya is Gaboon Ebony with a hand turned and knurled nickel-silver pin. The tip on this knife is very thin.

Here are three completed W2 blades for sale. The handles have not be mounted yet, in the event a saya is also wanted. The blades are differentially hardened and etched, they are approx 62HRC. The top blade is a 200mm line knife with a cascara buckthorne handle, the middle knife is a 150mm honesuki with a ringed gidgee handle, and the bottom knife is a 150mm tall petty with a bloodwood handle. This is a 180mm Nakiri made of 52100 carbon steel that is approximately 62HRC. The blade height is 57mm at the heel. This knife has a matching cocobolo handle and saya, the accents on the handle are black buffalo horn and nickel-silver, as is the saya pin.
