You can probably tell from the video, but I was super impressed with the Kohetsu HAP40 Wa Kiritsuke/Gyuto 240mm.

I was also reminded that the Anryu B#2 Hammered knives really are such a solid performing line - always great on dense product :-).

Good job Steve as usual! You've really got this format down and it really helps to push one over the edge in hitting that "BUY" button!

Steve: love your videos making me have to buy a Harukaze AS western soon, but Please can you learn to dice onions like everyone else does? It really makes a difference!

The one I have is ground well. Not quite as thin as the Takamura R2 out of the box. I've sharpened it twice after getting it dull and it was pretty typical R-2 steel. It takes a little time to grind the initial edge. Edge retention is good on the knife and hasn't microchipped yet. I love these micarta handles. They're indestructible as long as you don't set it on a hot burner.

+1 with Mark's comments on the Makoto SG-2. It doesn't perform quite like the Takamura R-2, but yes that handle is cool looking and very durable. The handle size reminds me of the Takamura.

@Bob Z - are you referencing one of my lame cutting videos :-). I'm better now that I used to be, but not a speed demon as I'm not a pro. Also, tell me what you mean with the dicing like everyone else. I'm always open to constructive criticism.

Lol poking at you. I watched loads of your vids and never saw you cut anything..but it seems most of the other videos of guys reviewing or demonstrating a knife always involves dicing an onion, Mr KnifeFanatic, Aaron and Charlemagne (CGuarin). With all the knives you get to handle just thought it would be cool to watch you do it and see the knife in action.

I'm not comparing Kit, pretty sure most home cooks cant come close to what Aaron does but Id be happy to see another non pro do it, its interesting to see how the onion stays together (or doesn't)

Heh, I just wanted to point out how crazy good those two are! I like watching Steve too. It is neat when his videos are a little more interactive.

As an aside, I have seen so many of Steve's quick look videos that even my wife knows who he is when the video pops up. :lol:

I've had a long and full life of dumb things I've done with fire and stoves and other hot things. Started very early when I took an interest in my mothers iron as she was pressing some clothes. Age 4. Mental note. Don't grab a hot iron...

Eh, my father has set himself on fire three times that I was witness to...He has also cut off a finger tip with a table saw and smashed and broke his thumb twice in two years swinging a hammer...I too am accident prone but not quite like him. I think you are in good company.
