Konosuke HD2 270mm with saya

Just as the tital says:
Konosuke HD2 270mm with saya (CKTG Saya).

Got an excellent upgraded handle It's a red ebony d-shaped handle with perfect fit and finish between the ferrel and handle.

Got this in a trade for a work knife and then my toyama made it redundant so I'd rather buy something different.
Plus I'm pooling money for my next big knife purchases....like a newer cleaver I haven't tried yet.

Box is in mint shape and the knife is in great shape minus the small scratches you get from wiping and use.

Yes I can polish them off....but I didn't.

Shipping in USA only but out of country shoot me a message and maybe we can do something if buyer covers the cost.

That's just under a new one with a ho wood handle and no Saya.

That's is the Saya.

The handle was bought new from a knife store in San Francisco.

Id say for a majority of the time I use a Chinese cleaver,
But.
We also prep a massive amount sweet potatoes at my restaurant so I Cleaver isn't ideal for that. The 240mm HD tends to be a little short for that kind of work and the 270mm is closer to a standard 240mm just because the way they a measured.

I honestly never expected to be able to get a Toyama so this was the solution. Lol.

But since I have the new baby, this just isn't needed.

I personally think for a pro the 270mm is slightly better than a 240mm because of the edge length measurements that Konosuke takes. And the touch of added height and mass is handy.

These are excellent knives and it's my 4th....or 5th......

$300 nice round number for a hell of a nice knife :twisted:

Yeah I was surprised that someone didn't scoop this up after the price drop.

I had trouble trying to figure out if/what to sell this for because they are super cool.

I think this time of year everyone is doing more things outside the home that limit their budgets. Things were flying out of here during the the cold wet Spring.
That knife is no less than 40% under retail, it should be long gone!
If God wanted me to be a vegetarian he wouldn't have made animals taste so good.

Here is a comparison between a toyama 240mm gyuto and a Konosuke 270mm gyuto for people who might be on the fence but think it maybe to long.
The way Konosuke tends to measure knives is slightly different than other makers so it normally runs a bit shorter on the true edge length.

I am happy with it. Jumping from a cleaver to this knife is a smoother transition at work and while I love lasers this one is a great fit. It was suggested here that I should try it and I'm glad I did.

I'll probably try to pickup a Watanabe too because I hear they are similar, but if I do it would be a slightly different style like a KU version or a 270mm.
