KS vs Coleslaw!!
Following my recent post on how I have changed how I rotate knives, my Masamoto KS was in the chair this evening. Just knocked up some quick coleslaw with it and what a combination. It really did highlight why this knife is held in such high regard by many. I didn't gel with it immediately when I first got the knife but tonight proved why it's a keeper!!

I don't really eat cabbage but I do julienne a lot of carrots and the KS is my go-to. It just feels right. Others might go to a nakiri but I only have experience with two of those and reach for neither. It is almost always the KS unless I want to try to convince myself to use another knife but then I am disappointed!

The KS hype never really heard anything negative mostly positive can't wait to try one

About the only negative you hear about the KS is the height at the heel. Some people complain and have even sold their knife if it comes in under or even at 48mm at the heel. 49+mm at the heel and most are generally very happy with the knife.
If God wanted me to be a vegetarian he wouldn't have made animals taste so good.

Out of interest mine in 48mm. For me I think it was the height combined with the longer length that meant that it just felt a little alien at first!!

They are a near clone of the old Sabatier profile that I love so much. Better steel and better grind. Love mine, rarely use it, but I will never sell them. The coleslaw looks like a dream - knife skills you have in excess. I'm still learning to matchstick zucchini consistently, but it's coming quickly

Thanks Isboogy. My KS is an absolute keeper. I also love the fact that it is so different to most of my other knives.

I have been contemplating selling my KS never used... but after seeing this post, I am having second thoughts on letting it go.
