Perfect characterization. I'm not sure I'd say they are better performing than Fujis, but that is certainly subjective and I could see either side of the argument. Great pairing and fantastic execution. The carbon fiber pattern almost looks like black palm which I really dig.

Today's new addition. custom handled Saji R2 Diamond 210mm. My first Saji, gave it a workout tonight and it has a more solid feel that other R2 knives that I have. It's a little bit thicker on the spine but really thin behind the edge.

Just a simple Zakuri Tosagata Bocho 165 in B#1. I needed a new stone tester but I like it for more than just that and I have only had it a few hours.

thanks Jeff. I think it's going to be a really sweet cutter. I've only tested it on a few I ingredients, but so far it's been impressive.

I posted this knife earlier this week, but I needed a model to show off the new knife stand that arrived today courtesy of Duy. This is definitely gonna be the centerpiece on my countertop! Maybe you guys can convince Duy to bring a few slabs of marble to the show in September
