I am looking at a progression from the 150 bamboo stone. Which color do you think would be harder/ more uniform grit?

The black one :) An excellent stone. The 220 green is also softer - good for single bevels. Go for the black. Contact me anytime.

Now you can also comfortably jump to the 320 Platinum as well. The 320 ume green is a bit softer.

Ken,
Every time that I think I want to spring for a Nubatama stone as in a 1000 grit,I am confused at the different names, such as Bamboo,Platinum,or Ume. Then you have regular or hard etc, etc. I realize that a description of all would take a life time but could you clue me in on the 800 and 1000 grit stones in the series and their difference? I am dealing with carbon steels in Japanese knives but a few Germans as well,( choke).

Spring for one - it will last a lifetime for most. Ken sent me a 1200 bamboo stone that is soft and beautiful - as good as my old kikuichi 1K that was the standard for me. Stones are cheap - mine will last through my children's lifetimes. Even a chef who sharpens monthly will only need a new one every 20 years - less than 4 bucks a year. The one I got is 50mm thick - and it's a gem to bring an initial edge with - I thought I would be dead in the water when the fool cats broke my old Kikuichi stone - both the red brick and the Nubatama are great stones - I like the Nubatama just a bit better - it seems just as soft as the red brick but puts a slightly better edge on a knife (less use of the 6K is noted)

I have gotten a few more stones added to the Nubatama lineup to add to this list. As soon as they come in I'll post them here. This includes a 220 Platinum, a 46 and 80 grit stone, etc.

This list still accurate for available EP sized stones, Ken? I know how supply chains all around are disrupted by the pandemic so I wanted to check here. Thank you.

I am still trying to maintain pricing so these prices are vallid. I have a good inventory of most of these stones, but shipping from Japan is getting more difficult and costly.
