Re: New Knives For Sale
This is a 150mm Honesuki made of differentially hardened W2 steel, it has been heat treated to approximately 63HRC. A Honesuki is specially designed to break down poultry and it excels at this task. The handle is Australian Ringed Gidgee with accents of buffalo horn and nickel-silver. The blade is a little lighter in color than what is shown in the photos. While it is a high polish, I did not polish all of the etchant off, it is kind of a gun metal gray look.

Re: New Knives For Sale
This is a 253mm gyuto made of 26C3, a German steel from Uddeholmstrip as a razor and scalpel steel, it is also known as 1.2002 using the German designation. A common comparison point for 26C3 is Hitachi White #1 (Shirogami #1). Devin Thomas likes to call it “Spicy White.” They are both very high carbon steels with relatively low alloy. This blade has been differentially hardened and tests at 64-65HRC. The blade is 52mm tall and weighs 7.25oz / 206g.
The handle is gaboon ebony with abalone and nickel-silver spacers and end cap. The saya is also gaboon ebony and has a nickel-silver pin with abalone inlay.
