Yahiko ICE 210mm gyuto - SOLD!
Up for sale, probably regrettably, is my yahiko ice 210(215)mm gyuto. This is the best pure cutter knife I've had. period. Over takedas, over konos, over shibata. It's just sharp beast. The only reason I am selling is because I am looking for a 240. fit and finish are superb. beautiful handle and no step whatsoever. If yahiko ice was available in 240 i would pick up the 240 version. That's how strongly i feel about the yahiko ice. It's that good.

This is a superb lines knives. Frankly one of the very best of the many I used. Yoshikane is the Smith. I owned the 240, sold it and picked up the 180 Ice bunka. The bunka is also superb, but I wish I had kept the 240. Turns out I am just not a bunka person and I plan to sell mine.
The Ice is very refined. Great looks, fit and finish. It’s a dream push cutter and takes a wicked edge easily. Better edge retention and toughness than I expected too. A sort of semi laser, but no other knife is a close resemblance. Shibata probably comes closest.

Thank you for the input! I agree. Superb knife. If only I had 240 version (Better for me right now as my tasks) I would deff. keep this knife. One of the best cutters i've owned thus far hands down.

The 240 apparently is back in stock, Appleward. Mark had indicated it could take another year so I am not sure what gives.
I am seriously considering selling my Shibata AS, the best cutter I've ever used, to get the Ice 240 again. It's not quite a laser like the Shibata, but it cuts almost as well and has a touch more meat to it. Still very laser-like. I just like a little more weight to my knives.
Anyone looking for a fantastic 210, the Yahiko Ice line is tremendous. The one caveat I'd offer - and it's not a caveat for me - is that it's surgical-style knife. Thinking in boxing terms, if a laser if a flyweight and a Takefu Village knife is a middleweight, the Ice is a bantamweight.

If I didn’t just buy the Hakata I would be all over this. I want one of these 210’s bad, but the timing is not right for me. I’m surprised this hasn’t sold yet. These are awesome knives.

I probably would have grabbed the Hakata, but they were out of stock when I got my Ice bunka.
This is the most seriously underrated line on CKTG in my view. Although I plan to sell my Ice bunka, I'll replace it with a gyuto.
I think it's fair to argue the 210 on sale here for just $200 is a virtually unbeatable value. It's worth every penny of its $240 price for brand new. At $200 for almost new? Very nice.

I sold my Hakarta. Great grinds and finish but the profile and shape did not work for me.
Would like to try the gyuto but I am knifed out this month!

I bought his and I love it.
The only down side for me is that it's not good for flipping it over and moving ingredients by sliding it on the spine. Also it took a little getting used to the shape since it's taller up front, but if you use it enough it becomes normal.
