I'm intrigued by the design, but slightly bigger knife if possible, maybe a slightly oversized 210.

I’d be thinking a profile like the Gassan 210. Sort of a cross between a gyuto and santoku, with a tall Matsubara-like grind. Distinctive profile that works great.

I just picked up a Tanaka Ginsan santoku for my wife to use at work. It got extraordinarily sharp when I touched it up for her. Sometimes an all stainless blade is just easier to deal with for a quick meal. That said blue 2 clad with SS would be my preference. In have never even held a hakata so I am assuming it will be a cross between a nakiri and a bunka based on the picks of the Yahiko Ice. Definitely prefer at least a 180mm length I think.

Consolation VG-10 vote here. haha. It'll never win so I'll give just one to help it save face.
I still enjoy my Tanaka in B#2 that I got many years ago. I had a Ginsan at on time too, I lament selling it from time to time. Tanaka does his knives right, I'd be interested to see where this goes, though perhaps less so in a Hakata.

A Blue No.2 would be fine, AS would be better, taller with an iron cladding similar to the Kamo's that were sold here but with the Tanaka grind and nice ironwood handle in a limited run.
