This showed up Saturday - the price was right and I've always been curious. I don't like the profile of the Euroline, but this Meiji might be fun we'll see. The fit and finish are top shelf it's very impressive for a production knife.

It's a Kramer by Zwilling. It's a good cutting knife after a trip to the stones yesterday. I'm seriously considering taking a half inch off the length from the top. That would lower the tip more like a gyuto - we'll see I'll have to use it more. We have a party this weekend and I have to process lots of cabbage, onion and leeks.

The core is FC61 and feels like AEB-L - sounds like it too on the stones. Great heat treat so it ought to hold an edge well.

When you get some time with it you should let us know how you like it in another thread! These production knives don't get a lot of love on these types of forums but some are quite nice. I admittedly have a soft spot for Miyabi made knives.

Off hand the tip is too high I like the weight and handle, but I'm thinking if the tip came down some it would be a really good knife. It's just not what I'm used to.

Just bought an Anryu AS Santoku 170mm to replace an old 17cm Wusthof Santoku. Love it!

One of my newest purchases to replace the one I stupidly sold so long ago.

Masamoto KS (old grind).

Just arrived from chef pham today with a custom handle.
I wanted something to reflect the stock handle but also be a little bit flashy. Buffalo horn, nickel and burled maple.

I just used his photo because it was waaaay better than the ones I took...lol.
