Wife got home about 10 minutes after I got them put back up!
If God wanted me to be a vegetarian he wouldn't have made animals taste so good.

There is something magical about the Kato but it really is hard to say. They are all great knives in there own way. My problem is being a home cook just cooking for two I have too many knives to get to use them all enough to really get to know them. I would have to say the biggest surprise in the bunch was the Mazaki. It can hang with the best of them and I seem to reach for it the most as an everyday knife. I used to use the HD and KS the most but haven't touched either in months! I like you love my Kato 240, it’s honestly my favorite Gyuto. However I think I must the only guy on the forum who didn’t like my Mazaki, I tried a 240 and a 270 and didn’t jive with either one. Maybe it’s me. I’m glad you posted your collection bro. I’m a home cook too and there’s just two of left, we’ll my Dad lives with us and my kids visit but life in the kitchen has calmed down compared to the past 25 years with seven kids to raise. Nice! I have one of those leaf spring 240s too. I use it quite a bit. Probably the knife I was most pleasantly surprised by.

It would be fun to have everybody that posted a group shot to do so again in a year and see what took place. Very enjoyable thread, keep them coming. I don’t think it matters what size your collection, knife guys love seeing knives!

Judging by his IG feed he is so busy making handles and blades in between his day job that putting all his stuff out to photograph would probably not be practical.
But like you, I would absolutely love to see his line up. You know there are some serious gems in there!
