Chinese Cleavers

A friend recently gave me a Chinese cleaver bought from the local Chinese market. It has an unusual shape that I describe as a leaf shaped blade. It has me wondering what are some other unusual shaped Chinese blades out there. I absolutely love using this piece and the price tag read $13.95 which surprises the hell out of me! It holds an edge very well in a professional kitchen (it is carbon). I love rustic blades and after buying a Daovua I want to know what else I can get similar to those?

I had a chance to visit the CCK shop in Hong Kong a while back. They’ve got some pretty interesting shapes too. There’s a lot of stuff in the shop they don’t have on their site, and a lot of stuff on their site that isn’t carried in the US. Maybe not cost effective to order a single knife from them, if you even can. It might give you some ideas though.

I have a cck butcher knife in the shop now. It is an interesting blade, huge!!! If I was breaking down big primals I would have one. I want one just for the conversation piece.

I got to handle a CCK butchers knife. It would be fun to roll into work with it to prep with just to see my cooks reactions!

I went to the cck shop in Hong Kong and picked up several (~_13) cleavers. Ill post some pics. I also wandered around to a few neighboring shops too. I think you'll like the jackfruit cleaver especially.
