I was as at the store and any pork that would do for schnitzel wasn't priced right so . . I thought hmmm . . . chicken livers coated in pretzel crumbs - with mushrooms and mushroom spaetzle (from Germany) yeah that's it - that's the ticket -

First galette. Rosemary dough crust, filled with caramelized onions, sliced purple and white fingerling potatoes, and Gruyere. Botched up that last fold, but it still tasted delicious!

Today's dinner was as simple as they come;
Trout Almondine
Butter, garlic, sliced almonds, coarse salt (forgot the pepper!), and some fresh parsley. Boom! Voila

The other day my wife found some tender loin steak for a good price.
Salt, pepper, sear in pan and finish off (only slightly too much) under the broiler. The taste and feel were sublime!

Braised a Pork Roast with cabbage,onions and Granny Smith apples and a side of tangy Coleslaw.

Lamb, Spanakopita and Fasolakia that were all delicious. I butterflied the lamb, seasoned, rolled, tied and sous vide at 140F for @ 24hrs the seared off in the very hot skillet. I made a quickie jus from the bag liquid.

Man, just got into this forum heavily this weekend, reading about knives and chopping this much makes me want to make my favorite dish: french onion soup. Nothing like having an excuse to chop up 10 onions haha

Thinly sliced up a bunch of potatoes with my Takeda. Daaammmnnn I was blown away how the slices didn't stick to the knife at all.
They went into a zuppa toscana soup (a la Olive Garden) which turned out great.
Brand new Weber Spirit II 3-burner which fits perfectly on my balcony. Grilled up a bunch of short ribs without a worry at all about hot spots.

15 pages and going strong. Thanks for playing along everyone, and wow, what great looking food.
Going through a promotion at work and getting my butt kicked (in a good way). Less time in the kitchen, more time doing all the admin stuff that comes with running restaurants. Getting ready to open at least two, most likely three, this year.
Dinner tonight is gussied up frozen pizza and salad.
