Ugh. I did the same thing. I can only check so many times and see they’re still in stock without doing something about it. Guess I’ll give a 210 a go again

Quite the couple!
These came in today and upon first glance the White No. 1 and Blue No. 2 appeared identical until closer examination.
The White No. 1 is thinner overall from the spine to edge and thinner behind the edge and as a result lighter, nimbler and performs slightly better. The difference is also apparent during initial sharpening on stones where the White No. 1 took a superior edge on a Watanabe 1k: the grain is finer. Both polished nicely on a Naniwa 5k and finished well on my best Ozuku stone.
When these were offered I realized I did not have any Fujiyama 210 gyutos and with my preferred Khii Laurel Octagonal handles too - I had to pick them up.

Great knives Gladius. I used mostly 240's for several years but have slowly fallen back to using 210's more often. I have picked up 210's in Mazaki and now the Fujiyama.

Jeff, are you telling me I need to start stocking up on 210’s?

If I were inclined to sleep on the couch for a while, I might get one. Jen still thinks I have too many knives (well into the 140+ kitchen knives now), and I will be getting another CHII blade this year, but I don't use 210 blades much any more. Next year, I will get a Fujiyama - dreams need to become reality in some worlds.

It doesn't hurt to keep a few nice ones around.

There is/was a Fujiyama 210 on the sale items part of page.
But the link takes you to the Kono Fuji 210 regular page, does that mean it was already sold?
I couldn't believe it when i saw that, wondering what scratched meant? Like looking at the Sujihiki sitting on sale page, these things seem so hot surprised a minor blem issue keeps them from evaporating into thin air.

Thanks Jeff and Ray. I have been real happy so far and comfortable using these smaller 200mm's. I previously overlooked them but they are of a very handy size: quick and very nimble.
