I baked some bacon! If you never tried this it makes the most evenly cooked bacon and with foil in the bottom of the sheetpan clean up was easy. I baked regular Oscar Meier for about 30 minutes at 375 turning the pieces twice.

I wonder if the baking tray makes them crispier or less crispy. Cause otherwise they are essentially being fried in their own grease in the pan.
I usually do kirkland bacon, 400 degrees for about 15 minutes, flipping once.
Best way to make bacon by far, couldn't agree more!

This sounds pretty good, I'll have to try it. Personally I don't like it too crispy, but I could probably fry them a little less at the end

Drewski: i watched that vid and looks good if you want 3 pieces of bacon, but the tray method is for a whole package when you have a crowd. you have to try it once at least. The bacon turns out crispy and evenly cooked hardly greasy since the grease falls into the foil lined pan. OK - without sounding somewhat redundant - I did another Sour Cream Banana nut bread in my cast iron Field #4 skillet. I pushed the limits with two large bananas for this recipe and the bread finished quite tall and very good.

Totally agree. Figured would show a few things i do in my kitchen from time to time.
Corn and Tallegio Capaletti. Gonna be serving with watercress vichysoise, pickled radishes, beech mushrooms, sorrel and celery greens.
Chicken breast, fried green tomato, bok choy and Dijon slaw, grilled peaches and sweet tea gastrique.

lately ive cooked some porcini fettuccine with beech mushrooms , shallot tossed with an alfredo sauce, i was wishing i had a bit more of an acid element to it.
next day made the same pasta but with some roasted mini sweet peppers and the alfredo...now im thinking of adding some roasted cherry tomato , using a pesto instead of alfredo next time.
also was interesting doing some bone in chicken thighs with jamaican style jerk sauce on my charcoal weber, using kiln dried rock maple though....so there is such thing as too much smoke...lol
lettuce in my garden is starting to really rock....

Yeah I can see what you mean about the acid with the alfredo. It's not an easy thing to incorporate into cream sauces. I almost always have something pickled with most of my dishes (I will pickle anything), and like to do pickled onions or shallots with my alfredo. Basic recipe for my pickles is about 2:1 vinager to sugar. Heat it until dissolved and pour over sliced anything until cool. Never smoked with rock maple but I have had a few things come out smokier than I would have expected. The first time I did my smoked potato puree I smoked raw potatoes until they were soft and proceeded as normal and was knocked back by the smokiness. Now I cook my potatoes in water until soft and stove top smoke for 20 minutes. Way less agrressive.

Oh and timos, do you brine your chicken before smoking? I find that that helps tone down the smoke as opposed to doing it "raw".
