Mushroom season is on!!
I get a phone call from my nephew this afternoon and he says do you want some "Hen of the Woods"? I say "sure" he says "well come on over".
A gallon bag of cleaned, sliced hen of the woods picked fresh today. They picked 30lbs. of it and 20lbs of chicken of the woods last week.
I picked up a steak on the way home and boy are these good. Pan finished red potato, slice of grilled radicchio, medium rare steak and wild mushrooms topped with pan sauce - fond, splash of stock some port, a little garlic and a small knob of butter. I ate the whole thing -

We got our last Chanterelles of the season last week. We had so many this year that we got sick of them...they are free and we stopped picking them for about 6 weeks....it was nice to have a few last week though.

I still hate all of you . I got absolutely no mushrooms this year. It was miserably dry through mid July and then still not much. I also lost my beater car so I couldn't go to the remote sites looking... Congrats, they look great.
Hen of Woods or maitake is one of my favorites. It doesn't grow around here, so my only experience has been store bought.

Another gift from another friend - Hen of the Woods, Chanterelle, and oyster mushrooms. The only thing to do? . . . thaw out some MEAT stock and make mushroom. barley soup.
I started with some bacon, leek, garlic then the bulk of mushrooms then MEAT stock. Once it got going I cooked off some Port and added that, smoked salt, black pepper, thyme, parsley and some of the cooked bacon. After @ an hour of simmer I added some heavy cream then blitzed it with the stick then reduced some more while the barley was cooking in turkey stock. Just before it was done I sauteed the saved mushrooms in bacon drippings and compound butter then added them and the reserved bacon to the pot and let that rest till the barley was done. Then I added the barley and served - oh boy what a treat!!
*The meat stock in question was roasted pork, veal and beef bones cooked @200f for 40hrs. with leek greens, onion, garlic, carrot, celery and herbs.

Question; I have been looking for resources on foraging mushrooms. Does anyone have any good ones? I know going with someone with experienced is best, and I am trying to join a community meetup group in the meantime.

Very close to Wissahickon Park.

Check around facebook there are large amounts of mushroom ID groups, many of them are rather regional.
Look into any mycological societies nearby as well.

No - after roasting the bones I put them in a stock pot with cold water, mirepoix, garlic and herbs and that goes for 40 hrs. I use a digital temp controller with probe on a hot plate. Dorkfood to be exact.

Mmmmmmmmushrooms. Not fresh, just rehydrated porcinis and store bought criminis piled on top of a pork chop (yeah, it's hiding under there )

First morels of the season found today on the property. Hoping for many more in the coming weeks!

Chanterelles are in full season, we have been harvesting them for a few weeks. Monica came back from her nightly wine walk on our property with these beauties! We honestly get so many, it is hard to use them all. Chanterelles are not supposed to be one of the better dried mushrooms, but we are going to put several batches in the dehydrator this year and see how it goes.

Went out with a few mushroom lovers today. Found a few good edibles and lots of non edibles. The Arizona mountains are in the middle of the monsoons. Here’s some Pics.

this year I'm not jealous. I have collected 40 lbs of Porcini's and probably 5 lbs of lobster mushrooms. I've gotten a few lbs of oysters as well. I'm still hunting but the rains have stopped and the mushrooms have stopped for the moment.

Yeah, the rains stopped here too. It was good for a bit. I went out Sunday and found some oysters, lobsters, Porcinis and a couple chanterelles, I also found some giant cauliflower mushrooms but got to them too late

We got these a couple of days ago on our property....there are many many more. We have had a great chanterelle crop this year. I am harvesting some and chopping them up and spreading to some other areas of the property...we started doing that a few years ago and are now getting mushrooms in places they had not grown before.
