New Request

Post by ChefKnivesToGo »

We're approaching a quarter-million orders since we opened and this is the first time I can remember seeing this request in the comments section. I kind of like it. :)

"I know it sounds silly but can you make sure the blade has a good ring to it? It's a going to be a gift and these knives sound so lovely when you tap them."

Ha! That is kinda neat. I have two knives that do that. A daovua and a Carter Hopkins blade. Seems to be monosteel blades that do it but not all of them. Every time I use those I give them a tap.

+1 on the Daovua! Especially the 240 First thing I thought of 😅

Itto ryu hammered nakiri sounds really nice on a maple cherry and grain... better than a takamura R2 or Gihei blue... I don’t know what or why but it seems pleasant. I seem to remember thinking the same about the shig passaround nakiri, maybe there’s something about iron clad knives?

Now I'm going to have to start tapping my knives and taking notes when I get them out...

I have a Bloodroot that makes a bell-like sound. It is marvellous...and melodious! It was only after I got that knife that I began to wish more of my knives chimed so nicely.

Takeda Nakiri, rings like a bell! I think nakiri knives ring the most.

I guess I’ll better get out the knives and see which ones sing.

If you bought knives that had a specific note, you could buy enough to play bohemian rhapsody maybe. If not, you have all those kick ass guitars to do that.

Thanks to Jon's post, I checked out a 52100 nakiri and it had a nice ring to it....a gyuto did not....not sure if the mounting and density of handle material makes a difference. Differentially hardened W2 had no such ring. I get asked all the time what are the differences between 52100 & W2...now I can say 52100 has a nice ring tone...thinking the price of 52100 blades is about to go up lol.

Hahaha. I’m sure it depends on all of that, including how far the tang is installed in the handle. It’s basically like a tuning fork I guess

My Konosuke W#2 300mm Suji has a crazy cool ring to it! My Marko 52100 240mm Gyuto has a pretty nice ring too.

See what you all have done to me, I'm standing in my kitchen tapping all my knives and my wife is looking at me like I've lost it! :?

I used my retired 52100 sab artifex on dinner tonight to see if there’s a correlation between steel type and ring tone... still the same ol “fwunk fwunk fwunk” of a Clydesdale running.

My son has perfect pitch.

He tells me my Shibata Kashima is E Sharp and my Takeda 240 is F Flat.

Only 86 more knives to go and I'll have my full keyboard assmebled.
