Shohonyama Awase Toishi Pass Around

Post by ChefKnivesToGo »

One of my stone dealers in Miki City offered me some of these lovely stones and I ordered 5 of them for the store. They should be on the site in a few weeks. He gave me a sample for me to try and I thought I would share the wealth and pass it around so you guys can give it a try. I think you'll like it and I'll include a Mikawa Nagura Shima as well so you can try that too.

I'll take 6 guys. 200 post minimum. Regular customers will get priority.

My deba could use a brush up, but... I'm not the usual stone customer. Then again, I'm happy to write a review+photos ;)

Here’s the stone that’s being passed around.

First; thank you Mark, Sue, and CKTG friends for allowing me to give it a go!

Before doing anything I relieved sharp edges and sealed the stone. If it were mine, I would have removed it from the base first, sealed it all separately, leveled it, then re-glued, but there is one deeper line across the shallow end of the stone, and I didn’t want to risk breaking anything. So please forgive the slappy job.

Approximate measurements are 195 x 70-72 x 15-23mm.
It’s a hard stone, the one line seems innocuous, and overall it’s rather enjoyable to use. However, without some help it’s stubborn giving up its abrasives.

Even with a fresh clean surface after lapping I got nowhere at all w just water, but after a little rubbing with the Migawa Shiro Nagura, everything changed for the better. It was nice and smooth, producing slurry and cutting about as fast as one could hope for. I rinsed the stone well and then tried a “diamond nagura.” It cut alright, but seemed a little less smooth and the resulting edge a little toothier.

The test dummies for sharpening (besides myself) were a TF Nakiri, a Takeda NAS petty, and a Wusthof stainless paring knife to give a range.

I hope everyone enjoys the Shohonyama stone as much as I did. It’s a great finisher. Hard, not too slow, pleasant to use, and best with nagura.!!

Now for some photos. Apologies for modern day cell phone laziness, crappy lighting, no color balancing, etc. The microscope edge shots are aprox. 300x with the exception of the last 2 at aprox. 70x.

First up, “Shohonyama Awase Toishi” before sealing, still w faint stamps.

Wow!

I love the close-ups! Were those cropped out of cellphone shots?

I'm planning on touching up a Deba, but I'm not sure how one goes about "touching up" a single bevel. Just it put it through the ringer?
Any way, nice review!
