So I finally found a cleaver that I wanted after selling my Konosuke Cleaver. This is a Shiraki White 2 steel. A custom Koa handle. Just came in yesterday. I am so excited to test this knife out. It honestly reminds me of the Konosuke cleaver. The phone picture doesn't really do this cleaver and handle justice.

Love all the cleavers I have fond memories of a cheap cleaver I used in college, but haven't yet found one that really wows me since I started learning more about good knives. Doesn't help that I'm more of a stainless person...

Excellent start! I've given several PS-60 knives as gifts and the recipients always love them.

Thanks. Kanehide PS-60 had what I was looken for & within budget. I have found them to be amazing when preping fruits & veggies. I prep once or twice a week & put meals in the fridge. These knives are way beyond anything I own.

I recognize three of these, but it is always nice to identify the knives when you post in this thread. Certainly not everyone can recognize every brand at site, especially as things get more interesting and custom!

Hated the handle, so I tried to burn it with a torch. Wet sanded, then buffed with polishing cloths & finally oiled.
I think it turned out really nice. Now I don't hate it.

I have burned a couple of ho wood. They turn out very nice, especially after they are sanded & polished. I have done a couple of sayas that turned out rather nice in my opinion.

Fujiwara Santoku 180mm. Though Santoku knives are not in vogue, nor is Fujiwara perhaps, this thing rules. Got it yesterday, kicked the tires, noted the overgrind on the tip and considered putting it right back in the box and sending it back. Instead changed what we were having for dinner to a root vegetable based soup. At this point my lady and two year old went for a walk, literally, around the block. In that short time I layed to waste a huge pile of sweet potatoes, carrots, onions, and fennel, plus a few smashed and trimmed garlic cloves and had everything oiled, seasoned, and in the oven roasting before they returned. And I was smiling ear to ear. Fun knife!
