I struggled early just using my dominant hand. Seemed odd using two different motions. I couldn’t judge my progress with both sides as easily.
Took me about six months to become comfortable. Now it seems very natural. I still have to make sure my angle height is the same. The one problem I do have occasionally is that one side is at a slightly different angle than the other. I’ve mostly eliminated the problem. Just takes practice and concentration.
Everybody has their own method, but I’m convinced that using both hands is optimal. What I suggest is getting a practice knife. I use a Tojiro ITK 240. I dull it on the edge of a stone and sharpen and thin repeatedly.
