150mm petty...such as Masakage Koishi, Kurosaki Megumi or Moritaka AS. Masakage Kumo Petty 75mm.???

Underrated and excellent. The Ginsan 210 has been my most-used gyuto for 4 years. A Saji nakiri might be tempting.

Something in a 270mm Gyuto would be welcome. Such as Tanaka Sekiso.

I’ve been eyeing a makoto AS ryusei 240. Also shibata AS and matsubara but these two are probably unrealistic with Christmas on the way. That kono western 240 seems like it would be a perfect every day gyuto for work though. Just more of a carbon steel kind of guy. Would love to pick the makoto up. 210 is a little small for professional use or I would pick up one of the many nice 210’s already on there.

Any other 210 gyutos...like Makoto AS Ryusei, Kurosaki megumi, or Kato Nashiji Suminagashi? I have a B#2 matsubara 210 and a Koishi 240. Thanks!
