Thin edge on Moritaka
I've been curious about those Moritakas…
They look like they could give a real wedgie! Do they wedge a lot? How's the food release?

Chop Shop Mid-Tec from Chris Miller.

I have always wanted a denty, surprisingly, this is my first one. 52100 @ 210mm x 47 mm tall, came with the well executed saya.

I have not cut with it yet, but first impressions leave me feeling happy.

You have excellent taste!
I absolutely love HD knives especially with that classic style ebony / blonde handle.

I also really miss my Ginsan Konosuke gyuto 😖.
I really wish I never sold it😭.

I have no idea why the 240 sujihiki ended up below the 210 gyuto instead of below the 270 sujihiki.
