What's that blue handled knife? Bottom left?
It is a konosuke wide bevel ginsan (non-fujiyama).

That Hinoura nakiri looks amazing. Do you know where I could buy one?
It's either that one or the Masakage for me. https://www.chefknivestogo.com/makona16.html
Just getting started...please PM if this is too off-topic.

Modest collection. Sakai Takayuki 250mm sujihiki and 130mm petty, Tanaka 240mm B2 gyuto and 150mm petty, a Miyabi 210mm gyuto, a Takamura R2 180mm laser, a Wusthof Ikon 90mm petty, a Global 80mm paring, a CCK cleaver (?!). Respect to all you collectors but I have too many other expensive hobbies—they were selected to be used daily by me and my wife so there's not a lot of overlap or excess.

Plan to get a longer 270mm slicer when I visit Japan in the spring—would have loved to meet Anryu-San but I hear he has mostly retired. Probably add a deba at some point too but the rack is pretty full. That’s pretty much my wish list.

Mahalo guys!
Hi Arthur. Thank you so much.
Yes it has been a lot of fun...hunting.....digging under rocks.....listening for whispers...and then scoring :D
And you are correct...the journey is far from over!

My biggest unicorn is a Fujiyama Honyaki by Ashi. But there are several others too
Ray! Good to see that Kono collection is as healthy as ever! If you're still hunting that unicorn, keep an eye on the classifieds in the new year

I'm a home cook who accumulated enough knives lately that it's fair to say I have a collection. I thought I would share it here and update now and then as it evolves. A few years ago, I bought a Masamoto VG as my first Japanese knife, which I found impressive at the time and still use for rougher tasks. Eventually, I learned of even better knives, so i bought a Kurosaki AS and Masakage Koishi, which were far more impressive for both their performance and craftsmanship. Since then, I have been fascinated by trying different styles and makers, especially those with long traditions or interesting stories, but only recently did I really go all in on exploring. Now, I have a small collection, which I hope to expand and then focus over time.

I also have a Teruyasu Fujiwara Maboroshi 180 mm gyuto on the way.
