Hello forum was hoping some of you whom own a nenohi or nenox stainless steel gyuto could give me your impressions of their proprietary stainless steel composition or characteristics....mainly my question is is it closer to VG10/ MAC VGmax or closer to AEB-L or 19c27.....mainly many thanks as always forum.....Chef Peter Adams

Cool happy there AEB-L not the biggest fan of VG stuff....thanks for the info guys always thought they looked good but am a traditional wa handle guy.....wanted to get some durable house knives with great f and f for the new restaurant I am opening....CKTG forum always delivers
Have a couple. It was often rumored that it was a vg1 steel. I have a sujihiki 230mm and a wa deba and petty. I like mine a lot.
