Which AS Kurouchi to choose

Post by tuchop » Thu Nov 07, 2019 9:34 pm

Hello everyone! After many of your suggestions a few months ago, I ended up buying a Yu Kurosaki R2 Gyuto. I'm very happy with the purchase and my addiction to kitchen knives grew considerably. I had the chance to try a Masakage Koishi 240 Gyuto and fell in love not only with the aesthetics but with the build quality and feel.
I saw there are three very similar knives made with the same steel and I was wondering if any had to chance to try them and compare them.
I'm talking about the Harukaze AS Morado 240 Gyuto (about $160), the Anryu AS 240 ($239) and the Masakage Koishi 240 ($317) which as you can see, they look very similar but prices differ a lot!

Thanks!

Koishi is going to be heavier an the Harukaze appears closer to a laser. How beefy of a knife do you want? I would go for the Anryu since i like octagonal handles better than the oval handle on the Harukaze.

Code: Select all

		Koishi	Anryu	Harukaze
Height 51	51	50
Spine width	3.8	3.5	2.1
Blade length	244	244	245
Weight (oz)	7	6.2	6.5
Price $ 317	239	160
But there appears to be a another option on the forum: http://www.chefknivestogoforums.com/vie ... c73#p99236

The Koishi is definitely the best performer of those knives listed but the Anyru is no slouch either. Haven't had a chance to try the Morado yet but it does not have the level of grind(from pictures) that the other two have and will probably not perform at their level. I am a big fan of the Harukaze AS https://www.chefknivestogo.com/haas24wagy.html and feel the Morado will probably be a very good budget knife, just not a Koishi or Anyru.

thanks for both answers! I guess I'll just go for the Koishi once Mark releases the 50off Thanksgiving voucher (?)

You can’t go wrong with a koishi, but If you are planning to wait here's an AS kurouchi that looks nice but it's out of stock right now.

I would probably still go with the koishi if it were me, it's a hard knife to beat.

The Koishi is one of the best performing knives I' ve used, but you do pay a pretty penny.

I'd highly recommend the Makoto Ryusei AS. It's does 95% of what the Kioshi does and costs just (just, huh?) $210. I like the profile better than the Harukaze.

The Anryu is the only one mentioned in this thread I haven' tried. it's supposed to be thinner than the Anryu B2, which I have owned. If so, it should be as good and perhaps a touch better than the Makoto.
