Damascus Pizza cutter??

Post by taz575 »

Ok, I saw a few people were interested in a Damascus blade pizza wheel cutter? Let's start a discussion!

I can get carbon Damascus barstock around 3" wide, so let's look at wheel sizes around 3". Do you guys prefer a single arm joining the wheel to the handle and the wheel be offset slightly or a wheel centered on the handle with an arm on each side of the wheel?

Big guard or more subtle guard?

Micarta or G10 handle or fancy wood?

As a non-dishwasher safe item I'd think a fancy wood handle would be prettier and equally functional. I'd recommend you make the cutting wheel removable for washing/drying or you'll get some rush in the center pivot spot but I'm not sure which handle design would allow best for that.

Personally, I wouldn't want a pizza wheel that could rust. But, if you were thinking of a viking style pizza axe then we could talk!

I am holding out for a pizza wheel in White 1 honyaki. Because Hawaiian pizza begs for a ham’on.

I am going to have to search around. I don't know that there is a wrong way . Damascus and fancy wood always go together. Even just a jet black ebony or bog oak would pop.

What about Myrtle wood? Just bought a hunk today to send off to have a French Rolling pin custom made by Mark's guy. I can point you to the place I found it at. Just 15 miles or so down the Freeway from me. Or is it Highway? Is there a difference? Enquiring minds want to know!

I was looking for stainless, but most bars are around 1.5-2" wide usually and the stainless damascus is MUCH more pricey! I know I can get Alabama Damascus in .100-.110" thick and 3" wide. I prefer to work stabilized wood due to my allergies, and will probably use a variety of stabilized wood for these.

Do you guys like the bigger thin metal guards or a more subtle guard?

I just ordered up some Alabama Damascus Redneck skin pattern damascus for this project. I may be able to do these around 3.5"-4" in diameter, too!

Sounds very interesting. I think a subtle guard is nice but I would take it either way.

I may have a piece of damasteel that’s right for you. I picked it up an a batch of off cuts. Happy to sell it based on the weight.

Did it come like that or did you etch it? What thickness?

It's .130" thick now. The thinner pieces weren't as wide. Alabama Damascus surface grinds and etches the bar so you can see the pattern in it. I have learned to look for a tight, consistent pattern and will often buy direct from Alabama Damascus since they have pictures of the individual bars as well as the sizes, so I can look for certain widths of the bar. This one is around 4" wide and 19" long and was one of the widest bars I have seen in a while!

Going to use a 3/16" thick pivot assembly that will be removeable for cleaning by the end user. I emailed my HT place to see if he can plasma cut, drill and HT the wheels all in one shot for me. That way I grind and etch the blades and then do the handles instead of trying to cut out perfect circles and drill them directly in the middle. If he can't, I have a crazy idea I want to try for doing those processes. Going to have to test it out first with some cheaper steel! LOL.

Got one cut and rough ground out, hoping to get the other ones prepped for HT this week coming up! Had some equipment issues (killed all of my bandsaw blades and messed up a platen idler wheel on my 2x72) this week during vacation, so things came to a grinding halt. New parts should be in this weekend!

And my crazy idea to grind the wheels worked!!! This could be pretty cool!

This is going to be awesome! Love the “grinding halt” part. Pun intended?

Yes, pun intended! I wanted to get these cut out, drilled, reamed heat treated and ground during my vacation, but that didn't work out too well! I also busted my glass platen a few weeks back too, so its been rough in the shop lately!

Got the 4 ground out and ready for heat treat today! One has a delam in the damascus, but it may grind out or I make the wheel smaller diameter. These are around 3 5/8" diameter and 1/8" thick.

Those look great! Thanks for taking on this project. Hope to buy one when they go on sale!
