I am planning on selling all the Japanese knives that I have bought to this point and replacing them with one knife that will suit me best based on what I have narrowed my preferences down to.
Up first is this Gihei that I am the second owner of. I purchased it very recently from a forum member here, and although I love the length and heft of it, some combination of the weight balance, my small hands, and the knife's fairly large handle made it not feel right in use for me. The steel is wonderful to sharpen, and although I didn't use it extensively, seemed as though it would hold an edge better than my White #1 gyuto, which should come as no surprise. It has a few cosmetic scratches on the blade face but is otherwise in very good condition. I notably improved the edge since receiving it and it will ship as sharp as I can get it.
I paid $175.00 for it, and it goes for $260.00 new on CKTG, even more from other retailers. I think I bought it at a very reasonable price and have not used it for more than a few meals.
I am asking for the same price I bought it for at $175.00, and I will pay shipping costs. PM me if you have questions.
