I'm a sucker for the rustic small-shop sub $130 knives.
I'll often go through the knife brands on CKTG and look for small-shop blacksmiths with friendly-priced offerings.
Yasunori comes to mind.... one guy doing everything from start to finish and most in the $120 range.
But there's quite a few makers on CKTG like that...oddly a lot of them start with Y

My 180mm Fujiwara Maboroshi santoku in white #1 gets regular use on smaller cuts of meat
