This Yoshimitsu comes to mind, white 1 and nice and thin behind the edge, I think I paid $65.

The Kyoshi Shindo Blue #2 Funayaki https://www.chefknivestogo.com/shbl2gy21.html really surprised me. Very thin BTE and it's a joy to use. The handle gets some criticism, but it's light, I replaced mine with a similar length octagonal handle that I had. The new handle was too heavy and threw off the balance, went back to the original until I find a suitable replacement.
