I was wondering if you guys would give me a knife recommendation.
I currently have a couple Miyabi Mizu SG2 knives and am looking to get something else, i am not sure if I should say better as the Miyabi's are very nice but something to augment what I have. Currently i have a Gyuto 8" and a 5.5 prep knife.
I am looking for something with a Wa handle, and I typically like stainless blades so they don't rust or oxidize over time but I do really like the dascusmac look if I could get one with pointers how to keep it from rusting. I also like something that holds an edge as long as possible as I send my knives off to be professionally sharpened so the longer in between the better.
Also while i know it does not affect performance i tend to like knives that look really nice both blade and the Wa handel. Being transparent I tend to chop with them a little more than i should and so far have not chipped a blade.
With that said could you give me 2-3 recommendations of knives you have in stock i should consider in the 300 or less price range. While i know the more commercial brands like Miyabi, I do not know any of the more traditional dealers and want to get the best fit for me for something that will hopefully last a long time!
What's a good stainless knife for me?

Hello and thanks for the question.
Here are a few knives that would be fun to own and enjoy and would compliment your current knives. They're stainless steel and within your budget.

I haven't used any of Mark's recommendations, but I have to say that I LOVE Myojin's grinds. He grinds many blades costing well north of 500, but my sense is that he brings the same care to every knife, no matter the price. My guess is that his Riki line cuts like a dream.

I like the suggestion of a Bunka, it would be a bit different than your other knives. Here is a couple with beautiful stainless damascus:

These could very well be thinner than what you are used to so you may want to consider trying a different cutting technique than you usually use with your Miyabi.
Another style of knife that might round out your line up is a petty. Here are a few:

Out of these options, the knives made from SG2 steel will have the best edge retention. I included a couple that are in Ginsan and VG-10 respectively, they will not quite have the same edge retention, but they are also no slouch and they are by good makers.

You absolutely cannot go wrong with either of these.ChefKnivesToGo wrote: ↑Wed Mar 13, 2024 9:26 am Hello and thanks for the question.

I have the 235mm Kiritsuke from Nigara VG10 Tsuchime Line, the 180mm Bunka is stunning, a beautiful knife indeed.

I also have the 210 Gyuto from Tsunehisa Nami AUS10, it is one of my all time favorite knives, I have been trying not to buy the santoku to go with it, not sure how much longer I will last, now I am considering the Bunka. The AUS10 holds a nice edge and sharpens up nicely.

After reading Stainless, Damascus, Wa handle and edge retention, Shiro Kamo was the first knives that popped into my head. Great knives but the inventory is a little thin right now.
