I briefly used a Shun Kanso and although i adored the design and handle, the blade material and geometry were simply not up to snuff for what i do in a professional kitchen. The handle design however was very comfortable and pleasant for long sessions in the prep kitchen and i would be interested in working with an experienced craftsman to try and recreate some of it's attributes. I purchased and just recieved a Masakage Kiri Damascus Gyuto 210 mm with VG-10 and i'm already in love but the handle leaves much to be desired in aesthetics, materials and ergonomics. After some research i think Matt is the perfect guy with the versatile skill set to help me, the problem is i don't know how to contact him. Apparently new members can't send PM's for some reason.
